They are especially skilled to handle "Taste of" events, where you may not be hiring a caterer but you need staff who understand how to service chefs and restaurants and serving hundreds of people including event setup, replenishing supplies, busing and organizing glassware and renting items and spotting issues and solving them without running to the event organizer every time.
